Crispy Buffalo chicken lettuce wraps with blue cheese sauce from Dinner Tonight - 100 Simple Healthy Recipes for Every Night of the Week (page 102) by Alex Snodgrass

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

We used tortillas lined with romaine for these wraps. For us, the blue cheese sauce was a little too lemony but a spoonful of honey was a quick fix. For the herbs, I used a generous amt of a freezer blend of fresh parsley, chives & dill in the sauce. A mix of quick pickled veg (matchsticked carrots, celery & radishes) was a great addition to the wraps & we thought this simple idea was seriously good :)

These were surprisingly simple and really hit the spot.

I used the air fryer for this but left everything else the same. Simple recipe, nothing new but it was an easy weeknight meal

We aren't blue cheese fans so we substituted freshly shredded cheddar instead. It was amazing! Mr Mella rated this a 9.5 out of 10 and he is a tough critic. Instead of frying in oil I sprayed the breaded tenders with avocado oil and used the air fry function in the oven. Less messy and still delicious. We will be making this one again.
