    I'm not a fan of ground turkey, but often buy it when it's on clearance for a crazy-low price & Husband always likes those dishes more than I do. I had all the ingredients for this recipe on hand, except only had 1 lb of ground turkey (instead of 1.5 lb) so I added 1 can of drained/rinsed black beans to make up for it. My only other change to the recipe was instead of stuffing whole peppers I sliced them in half vertically & removed seeds before the first baking & it was the perfect amount of filling for 8 heaped-up half peppers. IMO the beans were a great addition, it added texture to the turkey so I actually liked this dish! Served it with Knorr Mi Arroz Red Rice, cooked per pkg directions & added approx 8 oz frozen corn 5 min before the end of cooking. That was the perfect side dish for a great meal... I finally found a keeper ground turkey recipe! (Though next time I'll probably use cheddar for a sharper flavor.)

    I use ground turkey and add in whatever veggies need to be used up in the fridge. Reminder to myself: buy an extra poblano in case there's leftover filling again. Yummy!

    This was a tasty dinner but I did improvise based on my kitchen. My garden poblanos clearly aren't "medium" because 1/2 the filling (ie 12 oz of meat) would be far too much to stuff 2 peppers. I actually used 8 oz of meat (grd beef + hot & mild Italian sausage) topped up with corn + black beans. I used the seasonings listed but replaced the canned items (chiles & tomatoes) with a mild/hot mix of pickled peppers & homemade salsa. I opened/flattened 3 peppers, softening, layering cheese/filling & baking as instructed. This was a great use for garden/canning stuff, there is leftover filling for 1 lunch & this is definitely a repeatable idea.
