Italian skirt steak with bursting tomatoes from Dinner Tonight - 100 Simple Healthy Recipes for Every Night of the Week (page 136) by Alex Snodgrass

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

This is semi regular rotation. I’ll cook up ribeye or NY strip then add the burst tomatoes to top it off. This time I don’t have parsley or basil, so went a little off script. Placed a spoonful of the tomato mix on either side of the dinner plate. One side added mozzerella and basil pesto with a crostini as a caprese steak bite crostini. The other side of the plate, added crumbled blue cheese and crostini for a tomato blue cheese steak bite crostini. Both very good!

This was a good use for an 8 oz piece of flank steak, some garden basil & the last of some grape tomatoes. It came together quickly & we enjoyed it but I think it needed something ...else (maybe balsamic drizzled over)? We spooned this over a base of parmesan smashed potatoes and this idea will be repeated.
