    This is such a good loaf cake. Moist, tender & not overly sweet. I decided not to ice them. Just sprinkled them with icing sugar + very fine coconut. Took almost an extra 30 mins longer than the 1hr + 15min called for in the recipe. Or I got distracted & set that first hour incorrectly on the timer???? A very gentle bake & they turn golden.

    Delicious. Used the second loaf in a tropical trifle and it was perfect.
