    Given the simple ingredients, my expectations weren't that high, but I happened to have the exact amount of light coconut milk that needed using, so I gave this a try and it was surprisingly flavorful. I did use smoked paprika and extra ginger, which I think helped. Served with jasmine rice and spicy snap peas, it was a quick and easy dinner.
