Allow to marinate for a minimum of 2 hours, and ideally overnight. Can substitute vegetable oil for coconut oil, soft brown sugar for palm sugar, regular ginger for wild ginger, and Italian basil for Thai basil. The book's "Smoky green curry paste" called for in this recipe can be made in advance.
