    I did not have too many expectations for this recipe, since I was just looking for something to use up some leftover ricotta and my garden bounty of tomatoes and arugula. Boy, was I wrong! This is the perfect summer pasta dish for when you don't want to spend lots of time in a hot kitchen! The mustardy arugula and the sweet tomatoes where a perfect combination, complemented by the creaminess of the ricotta. Loved it!

    p. 22 - The first arugula, basil and tomatoes of the season inspired the choice of this recipe for our menu. The fact that, as Donna Hay promises, this dish comes together in under 10 mins added to its appeal on a warm summer evening. We like to have garlic w these ingredients so I quickly sauteed some thinly sliced garlic in the olive oil before adding the onion for this recipe and giving that a quick saute prior to adding the remaining ingredients and, the pasta. Whereas the arugula in the cookbook's photo is raw, mine wilted and released some of its nutty flavours. Delicious! We'll definitely have this again.
