The book's "Homemade mayonnaise" and "Simple vinaigrette" called for in this recipe can be made in advance. Can substitute a mixture of parsley, chervil, and fennel fronds for flat-leaf parsley; and clementines, blood oranges, grapefruits, or a mixture of all three for apples.
