Can substitute bean cooking water or canned bean liquid for chicken stock, basil for leafy greens of your choice, and cooked white beans or canned white beans for cooked chickpeas. Can use the book's "Ready-to-go mirepoix". See recipe for vegetable and leafy greens suggestions.
