    I was dubious at first, as I have never made a pie this way - I am used to French tarte aux pommes. But it works! I am not sure if the "apple filling" that must go at the bottom is the raw apples coated in the cornflour mixture or the cooked apples. I chose the former as I assumed this would soak in the juices from the top and avoid too much humidity on the crust. It turned out beautifully though, definitely to repeat, especially as there is probably room for improvement in my pastry shaping.
