    This is a really special cake. It's expensive to make, with a lot of pistachios, raspberries, white chocolate and 12 eggs. But for a special occasion it really is worth it (I made it for a friend's big birthday). There are 5 layers of pistachio sponge sandwiched with raspberries and white chocolate buttercream. I added a thin layer of seedless raspberry jam as I wanted more of a hit of raspberry flavor than out of season raspberries provide. The other change was I used pistachio cream with the white chocolate for the drip topping as I wanted it very smooth. My drip technique needs some work though I was pleased how it looked (I added berry candles) and it tasted wonderful. It is a very impressive looking cake.
