    This is different from normal cornbread but really tasty. It has almost a cake like texture. I baked a large sweet potato a couple days ahead of time and put it through the food processor. I baked it for about 37 minutes but it was still raw in the middle, would go the full 40 minutes next time and let rest for 10 minutes before cutting it.
