Vegetarian borsch with Carpathian plum butter (Lekvar) from The Authentic Ukrainian Kitchen: Recipes from a Native Chef (page 121) by Yevhen Klopotenko

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Followed recipe but instead of lekvar added juice of 1 lemon and 2 tablespoons sugar. This gives it a sweet and sour taste. At serving time to each bowl about 2 tablespoons of heavy cream added and topped with chopped dill. So good. Borscht has been designated by UNESCO as of ukrainian origin.
