    Can substitute dates for raisins, banana for applesauce, and butter or vegan butter for coconut oil.

    These were simple and delicious. Made a few modifications to make them allergy friendly, so I omitted the shredded coconut and subbed vegetable oil in place of the coconut oil. Also used her suggestion of replacing the apple sauce with a ripe banana since that’s what I had. These came out moist, and held up well over the the week, making a perfect breakfast. Zapped in the microwave for 30 seconds and topped with a pad of butter, yum.
