    This was the perfect weeknight dinner. It is a lot to do all at once with all the components, but the recipe lays out the timing of the steps pretty well and it helps to have a second person. I mixed cauliflower and regular rice together. If using regular jasmine rice, would cook about 1.5-2 cups to get enough for 8 people.
