Potato bread from Mary Berry's Complete Cookbook: Over 650 Recipes (page 447) by Mary Berry

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

3/19/24 (note copied from incorrect edition of this book) - I wasn't sure if the mashed potatoes were meant to be leftovers (with milk, butter, s+p), but that's what I used and the bread turned out well. As Mary notes, the loaves are small; next time I'd make one large loaf from 3/4 recipe. The crumb was slightly open, texture somewhat spongy but firm enough to slice neatly - great toasted for breakfast sandwiches.
