Chicken tagine served with beid hamine and rice (Tagine de poulet) from Rooza: A Journey through Islamic Cuisine Inspired by Ramadan and Eid (page 44) by Nadiya Hussain

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

Can substitute water for chicken stock.

Good chicken stew. Skipped the eggs on the side. Couldn’t get preserved lemons in time, so subbed lemon juice and a lot of zest. The 1/2 lb of olives was too much for me, so may want to decrease if you don’t love olives. Used fewer chicken thighs (4 vs 6) but did not decrease the amount of the spice mix, and it was just right.
