    Purgatory beans require soaking overnight. Can substitute dried cannellini beans or dried navy beans for dried purgatory beans, and Parmesan cheese for Parmigiano Reggiano cheese.

    Full confession, I used tinned cannellini beans. I did make the pesto by hand to atone for cutting corners with the beans. It was a great side dish to go with some bbq chops.
