    I used some bok choy and red and green tatsoi. Yummy! Although the portions in this cookbook are always smaller than I’d like.

    My meat loving husband tried the TVP and exclaimed, “That’s DELICIOUS! Next time you should triple that!”. Which is great, because I had to get a bit creative with the sauce. I had bok choy to use up. I had TVP. But for the sauce…chili crisp became gochujang paste. Rice vinegar became ACV. Chinese 5 spice became garam Marsala. Vegetable stock became…water. Thankfully still delicious! Next time I will acquire the actual ingredients (and triple it, apparently).

    Phenomenal! The sauce is worth trying again with other things. Very complex flavor. I subbed in braised kale cause that’s what I had. Will go into regular rotation.
