    The stew part of this is not great. I'll finish it, but it's just kind of bland and unexciting. However, the cornbread muffins are delicious--my favorite vegan cornbread yet. I used Bobs Red Mill medium grind cornmeal and avocado oil. They are light and tender and slightly sweet and very corn-y.
