Calabrian chili chicken with caper raita from Third Culture Cooking: Classic Recipes for a New Generation (page 100) by Zaynab Issa

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute chicken drumsticks for thighs, delicata squash for sweet potatoes, olives for capers, and lemon juice or olive brine for caper brine.

I really liked the chicken and cucumbers but the raita was just ok; would have preferred something closer to tzatziki, I think.

Might be a tad salty but overall really great!

This recipe was amazing. I’ve made it a few times. The caper Raita is surely a keeper. Adaptable to carry over to other recipes. I added a heaping of fresh herbs on type. Fried capers would be nice too or a caped oil for finishing! Stunning and you will thank yourself!
