    Delicious! A quick search for monkfish on EYB revealed this recipe. The original recipe is Galician-Style Lobster Salad (Salpicon de Lubrigante al la Gallegos). Casas offers a variant using mild firm-textured fish like monkfish which I had on hand, happily. This is very simple recipe to put together, and can be served right away at room temperature or refrigerated for several hours and served cold. Perfect on a hot summer day, served atop crusty bread to soak up the lovely vinaigrette.
