    I made 1/4 recipe as one 7" round layer for a coconut cake bake-off. This cake had our favorite texture: light, tender, moist, even straight from the fridge (and she does say to chill the cake before slicing). Coconut flavor was also good. Frosting was quite sweet; I would reduce the sugar next time. I'd also consider toasting the coconut for more contrast as we liked that on another cake. Overall, really good, recommended.
