Allow to brine for at least 4 hours, and preferably up to 24 hours. The book's "Sambal belacan" called for in this recipe can be made in advance. Can substitute a mixture of miso paste and black bean chilli sauce or vegan fish sauce for belacan, and can use fresh or dried lime leaves.
