Can substitute a mixture of miso paste and black bean chilli sauce for belacan, chicken carcass for pork ribs, soft brown sugar for rock sugar, water spinach for regular spinach, and rice noodles for egg noodles. The book's "Sambal belacan" called for in this recipe can be made in advance.
