    Best lunch salad I’ve had in a long time. Stores fine for office use. A few substitutions that worked well - Serrano ham instead of Parma (it’s easier to find for me), baby spinach instead of lettuce (but would be as good or better with the lettuce), crème fraiche instead of yogurt (a little less diet but absolutely delicious - I’m sure yogurt will work well next time).
