Allow dried cannellini beans to pre-soak overnight. Can substitute lamb shanks for beef shanks, dried Great Northern beans for dried cannellini beans, and a mixture of sweet paprika and dried red pepper flakes for Aleppo pepper. Tomatoes must pickle 1 hour.
