    This is really good as a main dish or side. I cooked 2 cups raw jasmine rice to get 6 cups cooked rice, then did 1.5x the rest of the recipe. Definitely serve warm with the roasted chickpeas. The sweetness from the pomegranate is so good with the saltiness from pistachios and chickpeas.
