    A great cookie, even though my execution wasn’t perfect. The shortbread looked underdone at the minimum baking time of 25 mins so I added 3 mins. But it turned out to be overdone, too crispy so hard to cut into neat triangles (my photo cherry picked the best looking ones). My other issue was that I only had gel coloring which he advised against. I couldn’t get a good mint green result so when I make them again I’ll get some liquid coloring. And I’ll definitely make them again. They really do taste like mint choc chip ice cream.
