    This is my go-to ham & cheese croquettes recipe. I bake a whole chicken and eat the dark meat for dinner, then reserve the white meat and 1/2 cup of pan juices for the croquettes - cook them a day or 2 later. I use 5oz of good prosciutto for the ham. Freeze beautifully after frying and can be reheated in an air fryer at 380 for 10 minutes. (Use the cooks illustrated French chicken in a pot recipe for the baked chicken).
