Allow dried beans to soak overnight. Can substitute dried borlotti beans for rose coco beans, confit duck wings for thighs, dried red chilli for pimentón, pork fat for duck fat, and Gruyère cheese for Cantal cheese. Can use the duck confit on page 168.
