    First attempt at an olive oil cake & the flavors did not miss here. The fragrant fennel sugar topping added a pleasant zing and crumb texture. The grapes woven throughout was also a welcome burst of flavor. The cake itself is beautifully rich, definitely worthwhile to prioritize quality olive oil. I used arbequina olive oil! One modification I made, was using 2 eggs because I only had extra large on hand. The directions were succinct & had helpful visual cues for what the batter should look like. I mistakenly tossed all the grapes in flour whereas only half of the grapes that are folded into the batter need flour the other half is un-floured, layered on top of the batter before the fennel sugar gets incorporated.
