The book's "Fermented chili paste" and Sweet chili sauce" called for in this recipe can/should be made in advance. Can use the gluten puffs on page 60, and can substitute tofu skin rolls for gluten puffs, other mushrooms for straw mushrooms, and other leafy greens for Taiwanese lettuce.
