Cross country cookies from To Die For - A Cookbook of Gravestone Recipes (page 42) by Rosie Grant

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

This book came up at our book club meeting, and I decided to make one of the baked goods for our next gathering. I don't have much experience making cookies with shortening, and I accidentally used steel-cut oats instead of quick oats. I was worried about the texture, but the overnight rest in the refrigerator allowed the oats to hydrate nicely, and the cookies turned out delicious. My husband is not usually a fan of oats in cookies, but he couldn't even tell they contained oats and said they were probably the best cookies he's ever had. I can tell Winnie was a very kind and generous person because she calls for a lot of chocolate chips in these cookies, which makes them wonderfully rich, chocolatey, and irresistible.
