    Meat marinates for a couple of hours or ideally overnight. Can substitute mutton shoulder or goat shoulder for lamb shoulder, salted potato crisps for potato straws, ghee for neutral oil, cinnamon stick for cassia bark, tinned chopped tomatoes for fresh ripe tomatoes, sugar for jaggery, and white wine vinegar for malt vinegar.
