Chickpeas soak overnight. Can substitute olive oil for rapeseed oil (pumpkin talkari), garam masala for amchar masala (baigan and eddoes curry), chadon beni leaves or coriander leaves for green seasoning (baigan and eddoes curry), olive oil for rapeseed oil (baigan and eddoes curry), canned chickpeas for dried chickpeas, olive oil for rapeseed oil (aloo and channa curry), garam masala for amchar masala (aloo and channa curry), olive oil for rapeseed oil (bhajee), callaloo for spinach leaves, jasmine rice for basmati rice, and olive oil for rapeseed oil (steamed rice).
