Meat marinates for a few hours after cooking. You may use the Green seasoning recipe on page 299. Can substitute salted pigs' feet for salted pigs' tails, white vinegar for apple cider vinegar, coriander leaves for chadon beni, and dried marjoram for fresh marjoram.
