Dried tofu sticks require soaking for at least 4 hours; dried shiitake mushrooms require soaking for 1–2 hours. Can substitute sweet bean sauce for hoisin sauce, thick dried wheat noodles for fresh thick wheat noodles, and tahini for sesame paste.
