Can substitute regular orange juice for bitter orange juice, boneless pork leg for boneless pork shoulder, and salsa de zanahoria con habanero for salsa de habanero con mango. You may use the tostadas recipe on page 233; you may use the frijoles refritos recipe on page 227.
