Leek and potato vinaigrette from High Fibre Heroes: How to Turn 12 Everyday Vegetables into 100 Joyful, Health-boosting Recipes (page 140) by Hugh Fearnley-Whittingstall

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute edamame beans or broad beans for frozen peas, Dijon mustard for English mustard, and cold-pressed rapeseed oil for extra virgin olive oil.

I love the way this book brings out the best in every vegetable - this is a really delicious dish. I did add some honey to the dressing as it was quite bitter so next time I will use less mustard instead, but overall a great meal. I served it with tuna steak but it would go well with any protein on the side.
