Can substitute dried ramen noodles for fresh ramen noodles, canola oil for vegetable oil, yellow onion for shallot, chicken broth for chicken bouillon paste, sugar for mirin, and fresh chives for scallions. Variation included for vegetarian ramen using shiitake mushrooms, vegetable bouillon, and white miso paste in place of pork and dashi.
