    This is a slam dunk in my house. I had a glut of blueberries to use, but I’m sure it would work with other toppings, or plain as well. These are not as indulgent as regular griddled pancakes, but my kids appreciate them just as much. And of course I appreciate the ease when feeding a family on a busy morning. I might add some melted butter to the batter to up the richness a little next time. The leftovers are in the freezer for another busy day.
