    Many Thai dishes announce themselves brashly with heat and big flavors. Spend enough time in Thailand and one also comes to note that many dishes assert themselves quietly, building nuanced and even subtle flavor with each bite. This dish belongs to the latter category. It is deeply savory. The coconut (I used frozen young coconut to great effect) gives great mouthfeel and also both a sweetness and a deeper note that plays beautifully against the mushrooms. Will make again. Needed to add a bit more palm sugar to get the balance right but this was a winner. David Thompson shines with soups, as anyone who has eaten at Nahm already knows.
