Can substitute dried ayocote blanco beans or dried cassoulet beans for dried royal corona beans, slab bacon for pancetta, tomatoes for tomato purée, oregano sprigs or thyme sprigs for rosemary sprigs, amaro or Madeira wine for sweet sherry, chili paste for harissa, and sour cream for crème fraîche. Soak dried beans overnight.
