Coconut horchata "colada" (Horchata de coco "colada") from Fiesta at Rick's: Fabulous Food, Luscious Libations, Great Times with Friends by Rick Bayless and Deann Groen Bayless

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

This was good, We made it for a Mexican Christmas dinner. One problem was that it solidified in the sprout of the dispenser. I think this was because I used coconut cream, not milk.

Grind the rice prior to adding 2 1/2 cups of water, then let it sit overnight. Blend and strain with nut milk bag. Do not add any additional water but add 1 can of good quality coconut milk(not cream or solidifies) and sugar. Add juice of 1 lime and refrigerate. When serving add 2 1/2cups pineapple juice. For self serve, Let everyone add their own rum and shake up a cocktail.
