    Veganized these yummy pancakes - almond milk + 1/2 t apple cider vin for the buttermilk; 1 T flax meal + 3 T water for the egg; whole wheat pastry flour for the all purpose. Accidentally left out the melted butter. Also realized this recipe has no salt - will add 1/4 t to my notes, they did taste a bit flat, esp without the (maybe salted) butter. Love this recipe.

    Almost had forgotten how soft and pillowy these feather-light pancakes are. A batch of batter lasted overnight in the fridge and allowed us a full weekend of breakfasts. Instead of buttermilk, I used a dollop of sour cream, then topped up with almond milk. These are magic.

    These are a bit magical in that they barely taste of banana but achieve a special lightness from its inclusion.
