    I followed the method for this, but with different quantities, and with boughten puff pastry. Was eventually very effective: lovely apple caramel. Notes for next time: do measure the butter and sugar to get the right ratio, but don’t worry if it’s easier to melt the butter. It took about 35 minutes to get the amber colour, I think because I had too much butter to reduce. “Concentric circles” means start with a circle around the outside of the pan, and work inwards. Do remember to loosen the tart in the pan before inverting.
