Banana loaf cake with walnuts and dried apricots from The Essential Baker: The Comprehensive Guide to Baking with Chocolate, Fruit, Nuts, Spices, and Other Ingredients by Carole Bloom

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute pecans, macadamia nuts, or almonds for walnuts and dried peaches, pears, cranberries, or raisins for dried apricots.

I found the combination of banana and apricot less appealing in practice than theory. Each flavor seemed to mute the other, also the bread didn’t keep as well, probably from the additional moisture from the apricots. Note there is salt listed twice in the ingredients, both with the wet and the dry; I just added the larger amount once and it was fine.
