    I scaled this down to 2 sandwiches using an 8 oz piece of sirloin steak. We skipped the mushrooms this time, adding sweet peppers to the poblanos & cubanelles. The cheese sauce, made with aged provolone, came together quickly and added lots of creamy flavour but when we assembled the sandwiches, it was clear that this was going to be a knife & fork affair. No matter...because we loved these.
