    Made this tonight for dinner and Dave raved this is the best duck confit dish so far. I made the candied kumquats with tiny sliced oranges - Dave did not like this ingredient, I did. The shallots were caramelized in the duck fat, and I also added crispy potatoes. For the dressing I used something homemade I already had in the fridge. Served it over arugula.
